Start by heating coconut oil in a large pan.
Add the shallot and let it cook until tender, stirring occasionally. It should take about 30 seconds to a minute.
Next, add the garlic and ginger, and cook it for another minute. Add salt, and Keep stirring!
Add the greens — I used Kale in this recipe. This should take a couple of minutes, max.
Next, add the coconut milk, and let it simmer for about 2 minutes.
Finally, add the vinegar, and cook for another minute.
Serve and enjoy!
